Moong Dal Vadas ( Bhajia, Pakoras, Lentil Fritters) | मूंग की दाल के पकोड़े


Moong Dal Pakoda is one of the popular pakoda in Northern India. It is also known as pakoras, bhajias, vada or fritters. This is a spicy delicious snack crispy from outside and soft inside. Split green gram or chilka moong dal with few more basic ingredients makes this delicious vadas.  Moong dal skin gives this vada/pakdoa crunchy outer layer, just how a pakoda should be.

Green Chilly
हरी मिर्च
1 big size

5 – 7 Garlic cloves 
5 – 7 लहसुन कि कली
Ginger
अदरक
½ Inch
आधा इंच का ट्कड़ा
Red Chili Powder
लाल मिर्च पाउडर
1 Tea spoon
1 छोटी चम्मच
Fennel / Saunf
सौंफ़
1  Tablespoon
1 चम्मच
Asafoetida / Hing
हींग
1 Pinch
1 चुटकी
Oil
तेल
To deep fry
तलने के लिए
Fresh Coriander / Cilantro / Parsley
हरा धनिया
2  Tablespoon, finely chopped
2  चम्मच बारीक़ कटा 
Salt
नमक
To Taste

Method:
  1. Wash and soak moong dal in water for 3-4 hours.
  2. Drain the water. Grind soaked moong dal coarsely to a soft batter by adding green chilli, garlic, ginger and little water in a mixer grinder. Take out the batter in a pot. (Add the water if needed, batter should be soft. If batter is too thick Vadas will be hard.)
  3. Add red chili powder, fennel seeds, asafoetida (hing), salt to taste and finely chopped coriander to above batter and mix it well.
  4. Take a deep frying pan and pour oil. Let the oil medium heat. To test, put one drop of batter in the oil. The batter should come up and not change color instantly.
  5. When oil is heated properly, dunk the batter with the help of hand or spoon in small quantity and fry them in small batches as shown in video. Fry the pakoras, turning occasionally with the help of spatula, until all sides are golden brown in colour on medium to high flame. Take them out and put them on a plate with tissues (to absorb excess oil). The tissue will absorb the extra oil from the pakoras. (Moong Dal Vada should be crispy from outside and should be soft inside.)
  6. Repeat this process for the remaining batter. 
  7. Our Hot and Tasty Moong Dal Pakora are ready to serve. Serve these hot with tea and tomato saucetamarind chutney or green chutney.
Note:
  1. If the oil is too hot the pakoras will not be crisp and if the oil is not hot enough, the pakoras will be greasy.
  2. If your batter (paste) is thin then add some gram flour (besan) in it.
  1. मूंग की दाल को पानी से अच्छी तरह धो लें और 3-4 घंटे के लिए पानी में  भिगो दें। 
  2. पानी छानकर, भीगी हुई मूंग की दाल को एक मिक्सर ग्राइंडर में  हरी मिर्च, लहसुन, अदरक और थोड़े से पानी की सहायता से दरदरा पीस लें।  (यदि आवश्यक हो तो ही पानी डालें। मिश्रण नरम होना चाहिए अगर यह गाढ़ा हुआ तो  पकोड़े बनाने में मुश्किल होगी।)
  3. उपरोक्त मिश्रण में लाल मिर्च पाउडर, सौंफ, हींग, नमक और बारीक कटा हरा धनिया डालकर अच्छी तरह से मिलाएँ।  
  4. गैस पर कढ़ाई रखें और उसमें तलने के लिये तेल डालकर गरम करें। जब तेल मध्यम गरम हो जाए, तो उसका परीक्षण करें। परीक्षण करने के लिए, तेल में ऊपरोक्त मिश्रण की एक बूंद डाले, मिश्रण को ऊपर आना चाहिए और उसका रंग तुरन्त परिवर्तित नहीं होना चाहिए।
  5. गरम तेल में हाथ या चम्मच की सहायता से उपरोक्त मिश्रण को वीडियो में दिखाएँ गए तरीके से छोटी - छोटी  मात्रा में डालकर दोनों तरफ से सुनहरा रंग होने तक मध्यम-तेज़ आँच पर तले।  बीच में कलछी की मदद से पलटे। 
  6. जब ये दोनों तरफ से सुनहरे हो जाय, तब कढ़ाई से एक प्लेट में निकाल लीजिये। इसी तरह से सारे पकोड़े तैयार कर लीजिये। (मूंग की दाल के पकोड़े बाहर से खस्ता और अंदर से नरम होना चाहिए।)
  7. हमारे स्वादिष्ट मूंग की दाल के पकोड़े बनकर तैयार हैं। इनका गरमा गरम चाय और टमाटर सॉसइमली की चटनी या हरी चटनी के साथ लुफ्त उठाएँ। 
नोट:
  1. अगर आपका तेल ज्यादा गर्म है, तो पकोड़े कुरकुरे नहीं बनेंगे और तेल पर्याप्त गर्म नहीं है, तो पकोड़े नरम / चिकने हो जाएँगें। 
  2. अगर आपका घोल पतला हो जाता है तो इसमें थोड़ा बेसन डालें।
